Presencia, aroma y sabor De la familia de las rosáceas, del género Rubus, la frambuesa es una fruta de forma cónica o redondeada, compuesta por un agregado de drupas, de coloración variable del rosado al violáceo. El frambueso, como la mayoría de las rosáceas, necesita de la acumulación de un determinado número de horas de frío para inducir el proceso de floración (vernalización). Agronómicamente se pueden diferenciar en: • Reflorecientes, bíferos o remontantes: cuyos vástagos fructifican en la transición del verano al otoño, dependiendo de la fecha de plantación o rebrote, sin necesidad de acumular horas de frío, y vuelven a florecer en la primavera del año siguiente tras acumular horas de frío durante el invierno. • No reflorecientes, uníferos o no remontantes: estas variedades fructifican una vez al año, aunque es posible obtener, con plantaciones tempranas, dos cosechas a una misma planta: la primera, a finales de otoño, para lo cual la planta ha tenido que acumular previamente horas de frío; y la segunda, durante la transición de la primavera al verano, ya que la planta acumula suficientes horas de frío durante el invierno para que se induzca de nuevo la floración. La utilización de diversas variedades remontantes como Erika y Polka y no remontantes como Glen Lyon y Glen Ample, así como escalonar las fechas de plantación nos permite abastecer los mercados con este producto de septiembre a junio. Además de su atractiva presencia, aroma y sabor, la frambuesa es una excelente fuente de vitamina C y fibra. As most of the plants of this family, it needs certain number of hours of cold weather to get the flowe- ring period (vernalization). They can be distinguished between: • Re blooming, `biferos ́or remontant: whose descendants are fruitful in the period going from summer to autumn depending on the date of plantation or re growth with no necessity of those hours of cold weather. They flower again on the next month of April after getting hours of cold weather during the winter. • Non re blooming, `uníferos ́ or non remontant: these varieties are fruitful once a year, although it is also possible to get (with early plantations) two crops on the same plant: the first one, at the end of Autumn, after certain hours of cold weather; and the second one during the period going from Spring to Summer due to the fact that the plant accumulates hours of cold weather in winter for the flowering process to be possible again. The use of different remontant varie- ties such as Erika and Polka and non remontant ones such as Glen Lyon or Glen Ample, as well as establis- hing different Dates of plantation, allow us to supply the markets from September to June.
