Salud cerían sus beneficios sobre la salud. El primero es el incremento del contenido de polifenoles antioxidantes en las lipoproteinas LDL y HDL (19). En ambos casos esto conllevaría una protección frente a la oxidación de las mismas. Mientras que los beneficios de la protección frente a la oxidación de la LDL ya han sido comentados, la protección frente a la oxidación de la HDL conllevaría una mejora de su capacidad de efectuar el eflujo de colesterol de los vasos sanguíneos evitando la acumulación del colesterol en los mismos y protegiendo frente a la aterosclerosis (14). Un segundo mecanismo sería a través de un efecto nutrigenómico. Los AOVEs han mostrado ser más eficaces que otros tipos de aceite reduciendo la expresión de genes relacionados con la aterosclerosis y la inflamación en humanos (20). Conclusión Por todo lo anteriormente expuesto, el consumo de AOVE pro- porciona beneficios adicionales a la salud humana, más que el consumo de otros aceites vegetales.• Referencias bibliográficas 1.
