This work shows some of the results obtained in two experiments, in which was analyzed the effect of oxalic acid treatments on the parameters of organoleptic quality, nutritive, functional (content in antioxidant compounds) and microbiological. These treatments were applied during the artichoke cultivation cycle by foliar spray in experiment 1, or by diping after harvest in experiment 2. In both experiments it was proved that the quality parameters were favorably affected by the oxalic treatment, especially its content in phenolic compounds, responsible for the health benefits attributed to the consumption of this vegetable. In addition, the oxalic treatments delayed the browning of the bracts, as well as their dehydration and opening, maintaining their organoleptic quality with respect to the deterioration observed in the control artichokes. Finally, the microbiological quality was also maintained in the treated artichokes. Therefore, oxalic treatment could be considered as a useful tool to increase the quality of this product and its health beneficial properties, both at the time of harvesting and during post-harvest conservation. 37 Lanzotti, 2015; Lattanzio et al., 2009; Shen, Dai, & Lu, 2010). Estas acciones se han atribuido a su composición en fenoles, compuestos con propiedades antioxidantes, capaces de eliminar los radica- les libres y las especies reactivas de oxígeno que se producen en el metabolismo normal de las células. Por lo tanto, los fenoles, actuando como antioxidantes, pueden prevenir la oxidación de los lípidos, proteínas y ácidos nucleicos y el consiguiente daño celular que se produce cuando los radicales libres no son elimina- dos eficientemente en nuestras células, y que son la base común de muchas de las enfermedades crónicas del mundo occidental comentadas anteriormente (de Falco et al., 2015; Fratianni, Tucci, Palma, Pepe, & Nazzaro, 2007; Lattanzio & Van Sumere, 1987). Del Rio et al., 2013; Garbetta et al., 2014). Sin embargo, la alcachofa es un producto muy perecedero y se deteriora rápidamente después de la cosecha, debido a su alta tasa de respiración, pérdida de peso, deterioro microbiano y otros daños fisiológicos y mecánicos (Gil-Izquierdo, Conesa, Ferreres, & Gil, 2002; Restuccia et al., 2013).
