Frutas y hortalizas son los principales componentes de una dieta equilibrada, especialmente por sus implicaciones en la prevención de ciertos tipos de cáncer y enfermedades crónicas. El brócoli (Brassica oleracea L. var. italica) es una hortaliza perteneciente a las crucíferas, muy rica en productos bioactivos como glucosinolatos (GLS) y sus metabolitos, los isotiocianatos (ITC), los cuales pueden ejercer actividades biológicas beneficiosas frente a diferentes enfermedades a través de la protección contra la inflamación y estrés oxidativo en las células, retardando o previniendo ciertos cánceres y otras enfermedades cardiovasculares o neurodegenerativas.
